What you can skip
Skip this build entirely if you cook sous vide a few times a month. The continuous duty rating on the Pro is worth nothing to an occasional cook, and the chamber sealer is a large machine that takes permanent counter space to solve a problem you may have four times a year. There is no shame in the serious build being the right ceiling.
