What does a vacuum bag have to do with botulism?

A sealed bag is anaerobic, meaning without oxygen, and that is the condition Clostridium botulinum prefers. Vacuum sealing removes one of the natural barriers that ordinarily keeps it in check. The practical rules are to refrigerate sealed food, observe the two hour limit in the 40 F to 140 F range, and chill anything not eaten immediately in ice water.

What is the danger zone?

The USDA defines 40 F to 140 F as the range in which bacteria multiply rapidly, and the published limit is two hours of total time in that range, or one hour above 90 F. The clock runs across the whole life of the food, so a long come-up in a low temperature bath spends part of your budget before the cook has really started.

Why does the grinder matter more than the espresso machine?

Because a machine can only push water through whatever bed the grinder produced. A grinder that cannot hold a consistent fine setting makes dialling in impossible regardless of what it feeds, so a modest machine with a good grinder consistently beats the reverse arrangement. This is the single most useful thing to know before spending money on espresso.

Does drying make jerky safe?

No. Drying removes water and slows spoilage, but it does not reliably achieve the pathogen reduction that heat does. The published guidance is to bring the meat to its safe minimum internal temperature, 160 F for beef and 165 F for poultry, either before or after drying, rather than relying on the dehydrator to do it.
